Carrots are the original “good-for-you"
vegetable. They are cheap, sturdy, tasty whether raw or
cooked, and a storehouse of fiber and beta carotene. They
offer lutein, vitamin C, and potassium as well. The
packaging of baby carrots makes them handy, so people tend
to eat more of them. They are great for lunch boxes, snacks,
and appetizer trays, as well as being easier to add to
recipes and stir fries. Let baby carrots help you on your
way to 5-A-Day. (UC Berkeley Wellness Letter).
Baby carrots are regular carrots peeled
and cut down. They were created by a California farmer
looking to use the broken and knobby carrots. What followed
was a consumer phenomena that increased the amount of
carrots eaten, now accounting for one-third of all carrots
sold. Their popularity even lead to the development of a new
variety of carrot that is longer (easier to cut up) and
sweeter.
